Passatelli Recipe
Passatelli is a traditional Italian pasta made with breadcrumbs, Parmigiano Reggiano, eggs, and nutmeg.
It is often served in a clear broth but can also be served with various sauces.
Here's a recipe for Passatelli:
Ingredients:
200g breadcrumbs
100g grated Parmesan cheese
Three eggs
One pinch of nutmeg
Salt
Pepper
1 liter of vegetable or chicken broth
Instructions:
Combine the breadcrumbs, Parmesan cheese, nutmeg, salt, and pepper in a mixing bowl. Mix well.
Add the eggs to the mixture and knead until the dough is smooth and compact.
Bring the broth to a boil in a large pot.
Place the passatelli dough into a passatelli maker or a potato ricer with a large-holed disk.
Squeeze the dough through the passatelli maker or ricer and let the passatelli drop into the boiling broth.
Cook the passatelli in the broth for 5-7 minutes or until they float to the surface.
Use a slotted spoon to remove the passatelli from the broth and transfer them to a serving dish.
Serve the passatelli in the broth or with your desired sauce.
