Piadina Romagnola What is it ? Recipe :

is a type of traditional Italian flatbread from the Emilia-Romagna region, specifically from the Romagna sub-region. Here's a recipe for making piadina at home:

Ingredients:

  • 500g all-purpose flour

  • 100g lard (or olive oil)

  • 10g salt

  • 5g baking powder

  • 200ml water

Instructions:

  1. Combine the flour, baking powder, and salt in a large mixing bowl.

  2. Add the lard (or olive oil) to the dry ingredients and mix until the mixture becomes crumbly.

  3. Slowly add the water to the mixture until a smooth dough forms.

  4. Turn the dough onto a floured surface and knead it for about 5-10 minutes until it becomes smooth and elastic.

  5. Divide the dough into small balls, about the size of a golf ball, and cover them with a damp towel.

  6. Preheat a grill or a large frying pan over medium-high heat.

  7. Take one dough ball and flatten it into a disc about 1/8 inch thick.

  8. Place the piadina on the hot grill and cook for 2-3 minutes on each side until lightly browned and puffed up.

  9. Repeat with the remaining dough balls, stacking them on a plate and covering them with a towel to keep them warm and moist.

  10. Serve the piadina hot, stuffed with your favorite fillings like prosciutto, cheese, arugula, or tomatoes.

Note:

You can also make a vegan version of piadina by substituting the lard with olive oil and the water with plant-based milk.
