Pinsa VS Pizza

Here's a traditional recipe for pinsa:
Ingredients:
500g wheat flour
200g rice flour
100g soy flour
600ml lukewarm water
25g salt
10g active dry yeast
One tablespoon extra virgin olive oil
Instructions:
Combine the wheat flour, rice flour, and soy flour in a large mixing bowl. Mix well.
In a separate small bowl, dissolve the yeast in 100ml lukewarm water. Let it sit for 5-10 minutes until it becomes frothy.
Add the yeast mixture to the large mixing bowl with the flour. Add the remaining 500ml of lukewarm water and the salt. Mix everything together until you get a smooth, elastic dough.
Cover the mixing bowl with a damp kitchen towel and let the dough rest for at least 8 hours or overnight. The dough will rise and double in size.
Preheat your oven to 250°C.
Divide the dough into four pieces and shape them into oval shapes on a floured surface.
Place the oval-shaped dough onto a baking tray lined with baking paper. Brush the top of the dough with olive oil.
Bake the pinsa in the oven for 10-15 minutes or until the edges are golden brown.
Remove the pinsa from the oven and add your desired toppings, such as tomato sauce, cheese, and vegetables.
Return the pinsa to the oven and bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
