Potato Gnocchi

Gnocchi is a type of Italian pasta made from potatoes and flour.

Here's a simple recipe for making gnocchi at home.

Ingredients:

  • 2 pounds of potatoes (preferably Russet potatoes)

  • 1 1/2 cups of all-purpose flour

  • One teaspoon of salt

Instructions:

  1. Boil the potatoes in a large pot until they are fork-tender, about 15-20 minutes. Drain and allow them to cool slightly.

  2. Once the potatoes are cool enough to handle, peel off the skin and mash them in a large bowl until there are no lumps.

  3. Add the flour and salt to the bowl of mashed potatoes and mix until a dough forms.

  4. Knead the dough on a floured surface for about 5 minutes until it is smooth and elastic.

  5. Divide the dough into four equal parts and roll each into a long rope about 1/2 inch in diameter.

  6. Cut each rope into 1-inch pieces and press the tines of a fork onto each piece to create ridges.

  7. Bring a large pot of salted water to a boil and add the gnocchi. Cook for 2-3 minutes or until they float to the surface.

  8. Remove the gnocchi with a slotted spoon and serve with your favorite sauce.
