Ingredients:
500g all-purpose flour
100g lard (or olive oil)
10g salt
5g baking powder
200ml water
Instructions:
Combine the flour, baking powder, and salt in a large mixing bowl.
Add the lard (or olive oil) to the dry ingredients and mix until the mixture becomes crumbly.
Slowly add the water to the mixture until a smooth dough forms.
Turn the dough onto a floured surface and knead it for about 5-10 minutes until it becomes smooth and elastic.
Divide the dough into small balls, about the size of a golf ball, and cover them with a damp towel.
Preheat a grill or a large frying pan over medium-high heat.
Take one dough ball and flatten it into a disc about 1/8 inch thick.
Place the piadina on the hot grill and cook for 2-3 minutes on each side until lightly browned and puffed up.
Repeat with the remaining dough balls, stacking them on a plate and covering them with a towel to keep them warm and moist.
Serve the piadina hot, stuffed with your favorite fillings like prosciutto, cheese, arugula, or tomatoes.
Note:
You can also make a vegan version of piadina by substituting the lard with olive oil and the water with plant-based milk.
